To me, Spring is all about the smells: blooming trees, hyacinth & crocus, the mineral scent of the ground beginning to defrost. The infusion of lavender in my Bee’s Knees variation, along with the sweet & earthy smell of the gin with raw honey, seem to capture the essence of the early days of Spring.For most of us here in New England, this winter has been brutal. Record-breaking snowfall, extreme cold … and it’s lingered with us until the end of April. But as of May 2nd, I can say Spring has officially sprung!

The Bee’s Blossom, like the classic, is a simple cocktail of gin, honey, and lemon juice.

To Infuse the Gin

  • Combine 2 tablespoons dried lavender buds with gin (like Wire Works Gin by GrandTen)
  • Store in a cool, dry place for 24 hours
  • When ready to remove the buds, strain the gin into a glass pitcher

Cocktail Instructions

  • Combine 2 oz of Lavender Gin with two tablespoons of raw honey and stir until combined
  • Add ice and 1 oz of of lemon juice and shake
  • Strain into a cocktail glass, and add an orange peel
