To me, Spring is all about the smells: blooming trees, hyacinth & crocus, the mineral scent of the ground beginning to defrost. The infusion of lavender in my Bee’s Knees variation, along with the sweet & earthy smell of the gin with raw honey, seem to capture the essence of the early days of Spring.

The specific gin used has balanced botanicals allowing the elderflower and grapefruit to shine through to create a citrus, fruit flavor while still being wonderful to sip.
